Vegetables and Rice

INGREDIENTS
  1. 8 oz of mushrooms chopped
  2. ½ cup onion, diced
  3. 2 cups napa cabbage, finely shredded
  4. 3 tbsp low sodium soy sauce
  5. 1 green onion, thinly sliced
  6. ¼ cup cilantro, chopped (optional)
  7. ¼ tsp toasted sesame oil
  8. Chili flakes (optional)
  9. 4 cups steamed Jasmine rice
  10. 2 tbsp toasted cashews, chopped (optional)
INSTRUCTIONS
  1. Steam rice according to package directions.
  2. While rice is steaming, in a medium large pot or pan add the mushrooms, onions, and cabbage, 3 tbsp low sodium soy sauce and cook over medium high heat.  
  3. Cover with a lid for a few minutes to help them release their water and then remove the lid and cook down for another 5-10 minutes until they are no longer super watery.
  4. Once the vegetables have cooked down, turn off the heat and add the cilantro, green onions, chili flakes if using, and the ¼ tsp toasted sesame oil if using.  
  5. Stir to mix well. Serve with steamed rice and enjoy!

Chocolate Smoothie Bowl

Are you looking for a great smoothie bowl recipe that is sweet and good for you? Try this chocolate smoothie bowl recipe:
4 bananas, I use organic and freeze them prior to using
1 scoop of vegan chocolate protein mix (Chocolate Shakeology works well)
2 drops of organic vanilla extract
Blend all ingredients in blender (I use my Ninja blender... I love my Ninja blender!)
Top with:
Crumbled organic chocolate granola
Flaked coconut
Fresh strawberries sliced

Sometimes you just have to try

I have been cooking and baking since I was ten. I remember my first baking experience: Peanut Butter Cookies. My mother collected common baking items and placed them in my reach and I had my recipe that I was to follow. At this point in my baking career, I didn't realize the difference between baking soda and baking powder, so I only used baking soda. My cookies turned out flat and tasted horrible. Fast forward six years, I wanted to try making orange chicken. I had never heard of some of the ingredients that were required and was not able to locate them at the local grocery store, so I figured those ingredients must not be as important. Big mistake, the lack of those crucial ingredients (arrow root, is the one that sticks out most in my mind) yielded a disgusting orange chicken. Needless to say, as I have grown in my cooking and baking skills, I have realized the importance of following the recipe, but I have also developed my own recipes. Sometimes you just have to try!
